2 oz Broken Shed Vodka
1 oz fresh blood orange juice
0.75 oz blood orange oleo-saccharum (recipe follows)
0.25 oz fresh lemon juice
0.5 oz pomegranate-honey reduction (recipe follows)
Garnish: pomegranate arils and blood orange twist
Blood Orange Oleo-Saccharum
4 blood oranges
1 lemon
8 oz sugar
Peel the citrus into large strips, avoiding any white pith. Place into a freezer bag and toss with the sugar until the peels are coated evenly. Let sit at room temperature for at least 4 hours (and up to 24 hours). Strain the oil into an airtight jar, and store in the refrigerator for up to one week.
Pomegranate Honey Reduction
4 oz pomegranate juice
2 oz clover honey
In a small saucepan over medium heat, combine pomegranate juice with clover honey and reduce by half for 10 to 12 minutes. Allow to cool, then transfer to an airtight jar. Store in the refrigerator for up to two weeks.
